Garlic Butter Shrimp & Asparagus

Ingredients

– 2 tablespoons of extra-virgin olive oil, divided
– 2 bunches of asparagus (approximately 1 1/2 pounds in total), with tough ends trimmed
– Kosher salt
– 6 tablespoons of unsalted butter
– 5 cloves of garlic, finely chopped
– 1 teaspoon of onion powder
– A pinch of crushed red pepper flakes
– 1 1/2 pounds of medium-sized shrimp, peeled and deveined
– Zest of 1 lemon
– Juice from 1/2 lemon
– Chopped fresh parsley for garnish

Directions

Step 1

Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the asparagus and season with 1/2 teaspoon of salt. Cook, stirring occasionally, until the asparagus are tender yet still slightly crisp, about 8 to 10 minutes. Transfer them to a plate.

Step 2

In the same skillet over medium heat, melt the butter along with the garlic, onion powder, red pepper flakes, and the remaining 1 tablespoon of oil. Add the shrimp and season with another 1/2 teaspoon of salt. Cook until the shrimp turn pink and are cooked through, about 1 to 2 minutes per side. Remove from heat and stir in the cooked asparagus. Then, add the lemon zest, lemon juice, and parsley, tossing everything together to combine.
