Keto Tiramisu Chaffle Cake: A delicious Italian tiramisu-inspired dessert made with keto-friendly cheese-based waffles called chaffles. Made with almond flour and mozzarella, these chaffles are versatile and can be enjoyed sweet or savory. Layered with coffee-infused mascarpone cream and cocoa powder, this dessert is perfect for special occasions and can be made ahead of time.

**Chaffles Ingredients:**

– 4 large eggs
– 1/2 cup blanched finely ground almond flour
– 2 teaspoons pure vanilla extract
– 2 tablespoons granulated Swerve
– 1 teaspoon baking soda
– 2 cups shredded mozzarella
– Cooking spray

**Filling Ingredients:**

– 4 egg yolks
– 1/4 cup granulated Swerve
– 16 ounces mascarpone cheese, softened
– 1 1/2 cups heavy cream
– 1 teaspoon pure vanilla extract

**Cocoa Ingredients:**

– 1 tablespoon unsweetened cocoa powder
– 1 teaspoon Swerve confectioners’
– 1/4 teaspoon instant espresso powder
– 2 1/2 cups strongly brewed coffee


Step 1: Making the Chaffles

1. Preheat waffle iron to medium-high heat.

2. In a large bowl, beat eggs, then whisk in almond flour, vanilla, granulated Swerve, and baking soda until well combined.

3. Stir in shredded mozzarella.

Step 2: Cooking the Chaffles

1. Grease waffle iron with cooking spray.

2. Pour a quarter of the batter into the waffle iron and cook until light golden, about 2 to 3 minutes.

3. Let cool on a wire rack and repeat for the remaining batter (3 times in total).

Step 3: Preparing the Filling

1. Bring a medium saucepan filled about 2 inches full with water to a simmer over medium heat.

2. In a large heatproof bowl, combine egg yolks and granulated Swerve over the simmering pot.

3. Whisk constantly, cooking the mixture over medium-low heat until doubled in volume and smooth, about 5 minutes.

4. Remove from heat and whisk in softened mascarpone until smooth.

5. Let cool slightly.

Step 4: Making the Whipped Cream

1. In a large bowl, beat heavy cream and vanilla until stiff peaks form, about 5 minutes.

2. Fold whipped cream into the mascarpone custard until combined. Set aside.

Step 5: Preparing the Cocoa Mixture

1. In a small bowl, whisk together cocoa powder, Swerve confectioners’, and espresso powder.

Step 6: Assembling the Tiramisu Chaffle Cake

1. Dip chaffles into strongly brewed coffee.

2. On a large plate or platter, arrange one chaffle, dust generously with cocoa powder mixture.

3. Top with a quarter of the filling, spreading it into an even layer, leaving a 1/4-inch border around the edges.

4. Repeat with remaining chaffles, filling, and cocoa powder.

Step 7: Chilling and Serving

1. Cover and refrigerate for at least 2 hours or up to overnight.

2. Serve chilled.
